AROMES DE PAVIE SAINT EMILION GRAND CRU 2019
Starting with the 2005 vintage, Château Pavie officially announces the release of a second-label wine under the name of "Arômes de Pavie” which replaces "Château Tour Simard ” because it would be easier for our consumers to recognize this wine among Perse's range. Principally from young vines that are less than ten years old, the final blend also contains numerous barrels that were remaining following the severe selection that is practiced for the first wine. The same care and attention goes into the production of this wine as to Pavie itself.
The 2019 Arômes de Pavie opens with a strikingly expressive, fragrant bouquet of crushed blackberries, wild blueberries, and dark plum, seamlessly integrated with nuances of violet, licorice, and warm tobacco leaf. On the palate, this Saint-Émilion Grand Cru is medium-to-full-bodied, enveloping the senses in a rich, velvety texture driven by a dense core of dark fruit, cassis, and sublte graphite undertones. Its structural foundation is remarkably refined, defined by fine-grained, chalky tannins and a vibrant undercurrent of fresh acidity that counters the vintage's natural opulence. The finish is lengthy, pure, and elegant, leaving behind a persistent trail of dark cocoa, baking spices, and a lingering sense of limestone minerality.
